Soil: Alluvial, sandy silt, lightly calcareous
Growing system: Double guyot
Density: 6.000 plants / hectare
Vineyard age: 10 years
Average production: 50 Hl. / hectare.
Harvest: Hand harvested, hand selection of grapes. From 10 to 15 October

Physical and chemical analysis

Title of alcohol: 14 % Vol.
Free sulphur: 25 mg/lt.
Total sulphur: 65 mg/lt.
Total acidity: 5,5 gr./lt.
Sugar residual: < 2 gr./lt.
pH: 3,75


Careful selection of best grapes in vineyard and hand harvest in cases. Fermentation with controlled temperature in conical base french rover vats, with post fermentation maceration till 18-20 days from fermentation start.
Malolactic fermentation with refining on its fine dregs for at least 60 days. Quality elevation in small rover barrels for 14 months.
