Winemaking

Careful selection of grapes in vineyard and harvest in cases. Destemming of grapes. Prefermentation maceration at 13°C for 8 hours. Soft pressing of grapes.
Debourbage at 12-13°C for 18 hours.
Fermentation in stainless tank vats with controlled temperature kept from 17-19°C.
Refining on its fine dregs for 60 days.
